eggs
Miracle Whip
butter or margarine
onion (minced)
salt and pepper to taste

Directions:
Directions:
Shred or mash hard boiled eggs.
Add enough Miracle Whip to make the mixture almost sloppy when all is put together.
Add minced onion, butter (margarine) and salt and pepper to taste.
Mix all together and spread on your favorite kind of bread.

I now asked number 2 son (Jeff) if there was a meal I made that he really liked. He couldn't think of anything and then he said egg salad sandwiches, so here you are.

For years I made egg salad sandwiches but was never really happy with the result and never could figure out what was wrong. Was talking with my mom (Aggie) and Auntie Dee about this and Auntie Dee said try adding a little butter to the mixture. I believe she said that this was the way they made it while running the resort up north. Seems like that made all the difference and I can say I really do like this recipe for egg salad.
