2 1/2 lbs. potatoes
salt
freshly ground pepper
5 tbsp. oil


Marinade:
1 onion
7/8 cup chicken or vegetable broth
3 tbsp. vinegar
1 tsp. mustard
1 tsp. sugar

Directions:
Directions:
Wash potatoes and cook for 20 minutes. Peel the potatoes when still warm, but let them cool completely before cutting into thin slices. Salt and pepper the potatoes well.

To make marinade: Cut onions in small pieces, add to hot broth, together with vinegar, mustard, salt, pepper and sugar. Pour hot mixture over potatoes and marinate for at least one hour. Before serving, add oil and salt & pepper, to taste.

Can also add: tomatoes or pickles or small pieces of bacon or chopped herbs (for example: parsley, chives or dill).
