4 lbs. stewed chicken
1/2 cup olive oil
2 tbsp. wine vinegar
1 tsp. Dijon mustard
1/2 tsp. salt
1/2 tsp. pepper
3 stalks celery, diced
1/2 cup mayonnaise, or to taste
1 tbsp. capers
dash of hot sauce

Directions:
Directions:
Combine oil, vinegar, mustard, salt and pepper for marinade. Remove bones and skin from the chicken and marinate it in refrigerator until well chilled. In the meantime, refrigerate diced celery in a bowl of ice water. When chicken is cold, cut in cubes. Drain celery and dry it well. Combine chicken, celery, mayonnaise, capers and hot sauce. Adjust seasoning, chill until served.

Variations: Add chopped fresh dill or tarragon, olives, hard-cooked eggs, raw green peas or whatever your garden has to offer!
