1 Cup Shortening
2/3 Cup Sugar
1/2 Cup Mashed Ripe Banana
1/2 Teaspoon Salt
1/2 Teaspoon Vanilla
3 Cups All-Purpose Flour (Sifted)
1 Large Egg Yolk

Directions:
Directions:
Pre-heat oven to 375*. In a large bowl cream shortening; gradually beat in sugar. Beat until fluffy. Add egg yolk; beat well. Stir in banana, salt, and vanilla. Add four, a little at a time, mixing well after each addition. Shape Dough into small log and place in cookie press or in pastry bag with large star tip. Press cookie onto cool ungreased cookie sheets. Bake in pre-heated oven for 8 to 10 minutes. Remove cookies from sheet and cool.
