10 lbs. red potatoes
3/4 cup minced onion
3 green onions with tops
1 1/2 to 2 Tbsp. fresh minced parsley
1 1/2 to 3 Tbsp Chicken base melted in 1/2 cup hot water.
2 Tbsp. salt
3 Tbsp. sugar
1/2 cup dry white cooking wine
1/2 cup lemon juice
1/2 cup vinegar
3/4 cup vegetable oil
3/4 tsp pepper
2 cups hot water

Boil potatoes. Let cool and peel. Mix the onions, green onions and parsley in small bowl and set aside. Mix all the other ingredients in big jar or water pitcher. Slice potatoes and layer with the sauce and parsley; do several layers like that. Let marinate for some time.

A large Tupperware bowl is ideal to layer and marinate this salad. Ideal to take to a picnic as it will not spoil if sitting out of the refrigerator. It tastes best at room temperature. This recipe can be halved and will keep for several days.
