Crust for 2 pies:
1 cup Crisco
3 cups Flour
1 egg
1 T Vinegar
3-4 T cold water
pinch of salt
3/4 tsp. white sugar

Filling for 2 pies:
6-8 large Granny Smith Apples
1 cup brown sugar
1 cup white sugar
2 1/2 T cornstarch
6 T butter (soft)
1 1/2 tsp. cinnamon

Use pastry blender to blend Crisco and Flour. Cut together until consistency of small peas. Beat egg, vinegar and water. Add salt and sugar. Blend into flour mixture. Continue working dough till round ball forms. Do not work dough any more then necessary. Make four equal balls and use to make 2 double crusted pies.
Put bottom crust in two pie plates. Peal apples and layer over bottom crusts. Prepare filling and layer over apples.
Prepare two top crusts. Carefully lay over apples and filling. Make several slits in crust for apples to vent. Brush melted butter over crust. Sprinkle sugar over melted butter. Bake at 350 º for 1 hour. Be sure to put tin foil under pie because the juice often overflows.
Pies can be frozen before they are baked and work great to take out and bake later when needed. Frozen pies should be baked at 350º for 1 hour and 15 minutes.
