1/2 gallon water + ice to make 1 gallon
1 c. kosher salt
2 c. sugar
1 c. red cider vinegar or frozen oj. concentrate
2 Tbsp. sage
2 Tbsp. thyme
2 Tbsp. rosemary
1 Tbsp. pepper

Directions:
Directions:
Bring all ingredients (except the ice cubes) to a boil in a large saucepan. Cook until the sugar is dissolved. Remove from the heat. Let cool. Add the ice cubes to finish the cooling. Once the brine is cold, add a whole chicken or small turkey or pieces of chicken or turkey. Refrigerate. Allow to soak overnight or at a minimum, 4-6 hours. Remove from brine and rinse the poultry. Discard the brine. Bake the poultry as you usually would.
