Cake:
1 box Sweet Rewards yellow cake mix (low fat cake mix)
¼ cup applesauce
4 eggs
1 can (11 oz.) mandarin oranges in light syrup

Frosting:
1 container (8 oz) light whipped topping, thawed
1 pkg (3.4 oz) instant vanilla pudding mix
1 can crushed pineapple in juice

Directions:
Directions:
1. For the cake: Preheat oven to 350 degrees F. In a large bowl, stir
together all cake ingredients until moist. Beat by hand for 2 min.
2. Coat 2 9-inch cake pans with nonstick spray. Pour batter evenly into
both pans. Bake for 25 min. or until a toothpick inserted in the center
comes out clean. Cool completely.
3. For the frosting: In a large bowl, mix together all frosting ingredients
until well blended. Spread over layers and top and sides of cake. Store
in the refrigerator.

I got it from Prevention magazine years ago, and the caption was "You Won't Believe How Delicious This Cake it! Everybody loves it and they don't have a clue that it's low fat".

It is light and refreshing and it is true - everyone does love it.
