2T olive oil
1/4 t red pepper flakes
20 oz package fresh cheese ravioli or tortellini
1/2 C pickled hot peppers, chopped
1 lb. Italian hot sausage
1/2 C white wine
10 oz bag of spinach leaves
lots of mozarella, grated

Directions:
Directions:
Heat oil and pepper flakes in large skillet over medium heat. Add ravioli and saute, moving them about in the pan until lightly browned in spots, about 4 minutes.
Add the peppers and saute another 30 seconds. Add the sausage and cook, breaking it up and moving it around until browned and cooked through, around 5 minutes.
Stir in the wine, then cover and cook until the wine has been reduced by at least half, about 4 minutes.
Place a bag of spinach on top, cover and let wilt. When there is room, place grated mozzarella cheese on top of spinach, cover and let melt.
