4 celery ribs
2 1/2 C. water divided
1 large onion
1 large green pepper
1 29oz tomato sauce
3 Italian sausage links
1 28oz diced tomatoes undrained
3 6oz tomato paste
1/2 C. parsley
5 to 6 garlic cloves
3 tsp Italian seasoning
1 tsp sugar
1/8 tsp salt
1/8 tsp pepper

Directions:
Directions:
Combine celery, onion, green pepper, and 1 cup water. Bring to boil. Reduce heat to medium, cook uncovered 10-12 min until vegetables are tender. Crumble sausage over vegetable mixture and cook until meat is no longer pink. Stir in tomato sauce, tomatoes, tomato paste, parsley, garlic, Italian seasoning, sugar, salt, pepper, and remaining water. Bring to boil. Reduce heat and simmer uncovered for 45 to 50 minutes stirring occasionally.

This recipe can also be canned.
