2 eggs
1 cup milk
1 cup all-purpose flour
Salt and pepper to taste
Pinch nutmeg
1/2 cup melted fat or beef drippings, divided

Directions:
Preheat oven at 425º for 10 minutes before pudding is ready to go in. Beat eggs for 1 minute with an electric mixer on highest speed. Add milk and gradually beat in the flour. Add seasoning and 2 tbsp. of melted fat or drippings and beat 1 minute on highest speed. Let stand at room temperature at least 30 minutes. Place remaining fat in a 7 and 1/2" black skillet to cover the bottom by 1/8" and heat in the oven until sizzling hot. Add mixture and bake at 425º for 30 minutes. Reduce heat to 350º and bake an additional 10-15 minutes. Do not be dismayed when center falls - this is characteristic of Yorkshire pudding.

Note: it would be helpful to save drippings from previous roasts to use in making this dish.
