1 - 5.1 package instant vanilla pudding.
1 - 20 oz. can crushed pineapple, undrained
1/2 cup shredded coconut
1 - 8 oz. container low fat sour cream
1 - 9 inch graham cracker pie crust
whipped topping - optional

Directions:
Directions:
Stir the dry pudding mix, pineapple coconut and sour cream together in large bowl until well blended. Pour mixture into pie crust. Refrigerate at least 2 hours before serving. Serve with whipped topping, if desired.
