2 large eggs, 6 T flour, 10 oz (one box) frozen chopped spinach, thawed and drained,16 oz low-fat cottage cheese, 2 C grated cheddar cheese, a bit of freshly grated nutmeg, pinch cayenne, S&P, 3 T bread crumbs

Directions:
Directions:
In a large bowl, beat the eggs with the flour until smooth, add spinach, cottage cheese and spices. Pour mixture into well greased 13x9x2 baking dish and sprinkle with bread crumbs. Bake in preheated 350º oven for 45 minutes and cool for 10 minutes. Cut into 1-2" squares.
