1 Lb. ground beef
1 1/4 tsp. salf
1/4 ground pepper
1/2 Cup chopped onion
1/2 Cup chopped bell pepper
1 Egg, lightly beaten
8 oz. canned diced tomatoes with juice
1/2 Cup quick-cooking oats

Topping:
1/3 Cup ketchup
2 T brown sugar
1 T liquid yellow mustard

Mix all meatloaf ingredients well and place in a loaf baking dish.

Topping: Mix ingredients for topping and spread on load. Bake for 1 hour.

I usually prepare the meat loaf the night before and let it chill in the fridge. Then bake it the next day. The flavors have then had a chance to go through.
