2 1/2 c. flour
1 c. sugar
3 tsp. baking powder
1 tsp. salt
3 tbs. oil
3/4 c. milk
1 egg
1 c. mashed ripe bananas

Directions:
Directions:
Grease and flour a loaf pan (or 2 small ones). Mix all ingredients together. Bake 350 F for 55 min (less for smaller loaves). Always test for doneness with a toothpick or knife.
Makes 1 large loaf.
Wrap in wax paper to prevent drying.
