3-4 medium potatoes, peeled and diced, 2T vegetable oil, 10 oz chopped broccoli, 6 scallions sliced, 4 egg whites plus 4 whole eggs (or carton of egg substitute) 1/4 C parmesan cheese, 2 T minced parsley, S&P

Directions:

1. In a large oven-proof non-stick skillet, cook the patatoes over medium heat until almost soft. 2. Add scallions and broccoli and continue cooking until broccoli is as you like it.. Preheat oven to 350º, Beat eggs together with parmesan, parsley and S&P-pour over broccoli mixture. Cook until eggs are set on bottom over low heat, Move pan into oven to cook top of eggs and get "puffy".
