1 1/2 cups Panko Crumbs
3 large Eggs
4 5oz Swordfish Steaks
Salt and Fresh Ground Pepper
4 tbsp. Butter
4 tbsp. Olive Oil

Directions:
Place Panko in pie dish. In another pie dish, beat eggs to blend. Place steaks between 2 plastic wrap sheets. Flatten steaks to approximately 1/4" thick. Flatten steaks one at a time between sheets of plastic wrap. Remove wrap, season steaks with salt and pepper on both sides. Dip each steak into egg, then into Panko, coating completely and patting to adhere. Melt butter and oil in frying pan. Place coated swordfish steaks in pan and cook until brown and crisp, turn and brown other side. Approximately 1 1/2 minutes per side. Delicious served with an Arugula salad.
