Chicken Divan Recipe

2 10 oz. pkg. broccoli spears
2 cups cooked chicken diced
(or 3 breasts of chicken)
2 cans condensed cream of chicken soup
1 c. mayonnaise
1 tsp. lemon juice
1/2 tsp. curry powder
1/2 c. shredded sharp cheddar cheese
1/2 c. soft bread crumbs
1 tsp. melted butter (or a bit more)

Preheat oven to 350.
Cook broccoli, drain and arrange in 11 x 7 x 1 inch greased baking dish.
Place chicken on top. Combine soup, mayo, lemon juice, curry and pour over chicken. Sprinkle cheese on top. Make croutons ahead of time by browning cubs of bread in melted butter. Sprinkle over the cheese.

Bake for 30 minutes. Serve over rice.

This is a favorite recipe of mom's and our family growing up. The original recipe suggests that you put the rice on the bottom of the casserole, but we found that it dried the casserole out...but you can.
