2 -3 chickens cut into pieces
2 medium onions chopped
1 lb. peanut butter, either smooth or chunky
2 fresh red peppers
4 medium ripe tomatoes (or equal quantities crushed tomatoes)
1 can 6 oz. tomato sauce or tomato paste
oil for browning chicken
red pepper flakes if desired (to taste)
salt and pepper

Brown chicken in oil with onions
Put in large pot, cover with water, add tomatoes and tomato sauce/paste and add diced red peppers
Bring to boil, then simmer 25 minutes
Mix a small amount of the stock into peanut butter to thin out and expand to smooth cream, then add to stock. Add red peppers if desired.
Simmer until oil rises to the top, add salt and pepper as desired.
If chicken gets done and sauce is still cooking, take it out so it doesn't disintegrate

I used to make this a lot, its really a balance between chicken flavor and peanut flavor. I have had this in African students' homes and its quite authentic. Serve with rice if you wish.
