Cookie dough:
1 pkg active dry yeast
1 lb. butter
5 eggs
5 cups sifted flour
Walnut filling:
3 egg whites
1 cup sugar
5 cups shelled walnuts, ground
Grated rind of 1 lemon

Directions:

Dissolve yeast in 1/4 cup warm water. Melt butter and cool. Beat eggs, add yeast, butter and flour. Mix thoroughly.

Store cookie dough in refrigerator until well chilled. If you wish, the dough can be made up one day and kept in refrigerator overnight.

Beat egg whites until they hold a shape. Then beat in sugar gradually until mixture is stiff. Mix gently or fold in ground nuts and lemon rind.

Roll half the dough at a time, 1/8" thick, on a sugared board. Cut into 2" squares. Start oven at 400ºF or moderately hot. Get out cookie tins.

Place 1 tablespoon filling on cookie squares. Fold in Triangles, press edges together with fork. Bake 10-12 minutes.
