6 skin-on chicken breasts
4 oz softened cream cheese
1/2 c crumbled bleu or shredded swiss cheese
5 oz frozen chopped spinach, thawed & drained
1/2 c toasted croutons, crushed
salt, pepper & paprika to taste

Directions:
Directions:
Place chicken, skin side up, in a 9X13 shallow greased baking dish. In a separate bowl, mix cheeses and spinach together. Stuff spinach mixture evenly under the skin of each breast. Sprinkle each breast with spices and then crushed croutons. Bake at 350º for about 45 minutes.
