1 medium bell pepper, chopped
1 medium onion, chopped
1 medium zucchini, chopped
1 yellow squash, chopped
8 oz. fresh mushrooms, sliced
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
1 jar spaghetti sauce
9-12 lasagna noodles, cooked
4 cups shredded Mozzarella cheese
1 cup shredded Parmesan cheese
olive-oil cooking spray

Directions:
Directions:
Cook lasagna noodles until tender. Spray electric skillet with cooking spray. Saute vegetables with spices. Pour vegetables into mixing bowl. Put layer of vegetables in bottom of skillet. Layer with noodles, sauce, and cheeses. Repeat this process until cheese is left on top. Cover skillet with tight-fitting lid, reduce heat to low and cook until cheese is melted. Remove lid and cut into squares
