6 boneless, skinless chicken breasts
1/2 olive oil
2 T butter
1 large onion, slivered
1 large bell pepper slivered
1 large can diced tomatoes
1 T salt
1 T black pepper

Directions:
Directions:
Cut chicken breasts into 1" cubes and sprinkle with the salt and pepper. In a large skillet, heat oil and butter over medium high heat. Add in the chicken and sear but do not cook through. Add in onions and peppers and cook for about 5 minutes until they are almost tender. Add the tomatoes, cover, lower heat and simmer for about 5 minutes. Serve over cooked rice or egg noodles.
