1lb Ground beef
3/4 C. Chopped onion
3/4 C.Shredded carrots
3/4 C. Diced celery
4 T. Butter
3 C. Chicken broth
1 Bag (30 oz) frozen hash browns
1/4 C. flour
8 oz. American cheese (Velveeta)
1 1/2 C. Milk
3/4 t. Salt
1/4 t. Pepper
1/2 C. Sour cream (optional)

Directions:
Brown beef, drain, set aside. In same pan saute onion, carrots and celery in 1T. butter for about 10 minutes. Add broth, potatoes, and beef. Simmer 10 min. In a small skillet, melt remaining butter. Add flour, cook and stir 3-5 min until bubbly. Add this to soup and bring to boil. Cook and stir 2 min. Reduce heat to low. Add cheese, milk, salt, and pepper. Cook and stir until cheese melts. Remove from heat. If you want you can add Sour cream, blend and serve.
