1 head cauliflower
2 T. butter
2 T. olive oil
salt and pepper

Can add sautéed and browned onions.

Directions:
Directions:
Preheat oven to 375º.
Rinse cauliflower well and separate florets into small uniform pieces by breaking apart the head or cutting.
In baking dish, melt the butter and olive oil together. Remove pan from oven and add the cauliflower, floret side down into the butter/oil mixture. Toss a little olive oil on the stems. Add salt and pepper.

Roast until the cauliflower is browned - about 20 minutes.

If you like, you can serve with sautéed/browned onions on top.

The roasted cauliflower gets a nutty flavor that is great. This is my favorite way to make cauliflower in the winter. I don't often add the onions..its so good on its own.
