Garlic Zucchini Recipe

4 zucchini, grated lengthwise
salt
2 cloves garlic
2 Tsp. olive oil

Directions:
Directions:
Slide zucchini and salt.
Place in a bowl with a town underneath and put a plate or bowl on top to make a weight- let the water drain out of the zucchini for at least half an hour.
Rinse with water, then wring out the zucchini with your hands so its pretty dry.
Saute in pan with garlic until lightly browned.

This is my favorite way to make this vegetable. Be sure and leave time for the zucchini to release its water... makes the final dish brown and a little crispy. Change the proportions to make it more garlicy if you like.
