1 cup Brown Sugar, lightly packed
2 tbsp. Flour
1 cup Maple Syrup
2 tbsp. Butter, melted
1/2 cup Nuts, coarsely chopped
1 tsp. Vanilla
Pinch of Salt

Directions:
Preheat oven to 400º. Prepare sufficient pastry and line 9" pie plate. Trim, flute edge, but do not prick. Slightly beat the eggs and mix together with brown sugar and flour. Stir in maple syrup, melted butter, nuts, vanilla and pinch of salt. Pour into prepared pie shell. Bake at 400 º for 35-40 minutes or until filling is set. Cool. NOTE: An alternative for 1 cup of syrup is 1/2 cup white Karo© syrup and 1/2 cup honey.

Three quarters of the maple products in Canada come from the province of Quebec and the rest from New Brunswick and Ontario. In this recipe, typical of Quebec, both flour and eggs set the syrup to a custard smoothness during baking.
