1 pkg. yellow saffron rice
1 medium onion, chopped
1 medium bell pepper, chopped
1/2 cup butter or margarine
1 (10 oz.) can Ro-tel tomatoes
1 lb. crawfish tails
1 can cream of mushroom soup
1 cup shredded cheddar cheese

Directions:
Directions:
1. Cook rice according to directions. Set aside.
2. Saute peppers and onions in margarine until soft.
3. Puree tomatoes in blender and add to the
pepper-onion mixture.
4. Add crawfish and simmer for 10 mixtures.
5. Place mixture in greased casserole dish and
cover with cheese. Bake in 350 degree oven.
until bubbly.

I'm sure that shrimp can be substituted for
