3 C.shredded cheddar cheese
3 C. shredded mozzarella cheese
2 Tbsp. butter
1/2 C. sliced mushrooms, optional
1/2 C. green pepper, optional
1/2 C. sliced green onion, optional
8 oz. diced ham or cooked sausage (I use spicy sausage)
1-3/4 C. milk
1/2 C. flour
8 eggs
2 Tbsp. chopped parsley

Directions:

Combine cheddar and mozzarella cheese in bowl. Sprinkle half the cheese in an ungreased 9x13 baking dish.
Melt butter in skillet over med/high heat. Add mushrooms, green pepper and onion, saute until liquid evaporates and vegetables are soft. Spoon vegetables over cheese layer. Top with meat and remaining cheese.
Whisk together milk, flour, eggs and parsley. Pour over cheese.
Bake uncovered at 350º for 40-45 minutes or until eggs are done (a knife stuck in middle comes out clean). Let stand 10-15 minutes. Cut and serve.

I was looking for an egg dish which did not contain bread, croutons or Bisquick. This one has a lot of cheese but you can cut back on the amount. It is very good!
