8 manicotti shells
1 can cream of chicken or mushroom soup
1/2 c. sour cream
2 c. chopped cooked chicken
4 oz. fresh chopped mushrooms
4 T. butter
1/4 c. warm water
1/2 tsp. chicken bouillon granules
1 c. shredded cheese (Colby or Monterey Jack)

Directions:

Cook manicotti according to directions; omit salt. Drain and set aside.

Saute mushrooms in 2 T. butter.

In mixing bowl, combine soup and sour cream. Mix 1/2 soup mixture with chicken - stuff manicotti. Place in greased square baking dish.

Combine water with bouillon. Mix with remaining soup mixture and mushrooms. Spoon over manicotti.

Bake at 350º for 15 minutes or until bubbly. Sprinkle with cheese and bake additional 5 minutes.
