1 lb penne
8 oz diced chicken breast
6 oz julienne red onions, green and red peppers
16 cleaned gulf shrimp
2 oz minced garlic
8 oz cooked Italian sausages sliced
2 TSR. Cajun seasoning

Tomato Sauce
3 oz extra virgin olive oil
1 diced onion
1 oz minced garlic
3 lb diced tomatoes
1 lb crushed tomatoes
1 L water
1 oz salt
1 oz cracked black pepper
3 tbsp. sugar
2 tsp. oregano
1 tsp. thyme
1/2 tsp. cayenne pepper
1 oz. fresh cut basil strips
1 oz chopped fresh parsley

Directions:
Directions:
To make sauce, preheat pot and add oil, onions and garlic. Saute for 5 minutes and add the tomatoes, water, salt, pepper, sugar, and spices except for the basil and parsley. Reduce the heat and simmer for 1 hour. Add the fresh parsley and basil and simmer for another 20 minutes.

Cook the pasta in lots of salted water and put off to the side.

In a hot pa, saute the diced chicken for 2 minutes. Add the onions. peppers, garlic, and shrimp. Saute for another 2 minutes. Toss in the Italian sausages, tomato sauce and Cajun seasoning. Simmer 5 minutes and then heat up the penne noodles, toss in the sauce and simmer for another 2 minutes.
