10 medium sized potatoes, either peeled of unpeeled.
16 oz. sour cream.
Bacon bits.
2 tsp dried chives.
2 pkgs. of dry Hidden Valley Ranch seasoning mix.
Salt & Pepper to take.
Small amount of Milk.
1/2 lb. of Velveeta cheese, cubed.
1 cup Shredded Cheddar cheese

Heat oven to 350º.
Cut potatoes in pieces and cook as for mashed potatoes. When tender, drain water and mash potatoes with salt, pepper, and small amount of milk. Add & continue mashing: sour cream, bacon bits, chives, and ranch dressing mix.
Layer half of potato mixture in a lightly greased 13 x 9 casserole dish. Top with chunks of Velveeta cheese. Top with remainder of potatoes, spreading to sides of the pan.
Bake at 350º until heated through, about 30 - 45 minutes. Top with shredded cheddar cheese and return to oven until cheese is melted.
