6 cups sliced squash
2 cups water
1 large onion, chopped
1 bunch green onions, chopped
1bell pepper, chopped
1 cup celery, chopped
3 cloves garlic, minced
1/2 cup margarine, melted
1 egg, slightly beaten
1 cup Italian bread crumbs
1 cup grated Parmesan or Romano cheese
1 tsp. Beau Monde seasoning
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. thyme
Tiger sauce or hot sauce to taste
1 lb. crawfish tails, cut in small pieces

Directions:
Directions:
1. Combine sliced squash and water, cook until
tender, drain.
2. Saute onion, bell pepper, celery, and garlic in
butter until tender.
3.Add vegetables and egg to squash. Stir in
remaining ingredients.
4. Spoon mixture into greased baking dish.
5. Bake 350 degrees until hot.
