1/4 cup flour
1/4 cup butter, melted
1 cup chicken broth
1 (14 ounce) can evaporated milk
1/2 cup water (use chicken broth, if available)
1-1/2 tsp salt (no salt if broth is salted)
3 cups cooked rice
2-1/2 cups cooked chicken
2 (4 ounce) cans mushrooms
1/4 cup chopped pimento
1/3 cup chopped green pepper
1/2 cup blanched toasted almonds, slivered

Directions:

Blend four into butter, add broth, milk and water. Cook over low heat until thick, stirring constantly. Stir in salt, rice, chicken, and vegetables. Pour into casserole. Bake at 350ºF for 30 minutes. Top with almonds. Serves 8.
