1 lb Italian sausage
6 eggs
2- 10 ounce packages frozen chopped spinach, thawed and well drained
1- 16 ounce package mozzarella cheese, shredded
2/3 cups ricotta cheese (1/2-16 ounce carton)
1/2 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
Pie crust for 2 crust pie

Directions:
Directions:
Cook sausage until well browned. Spoon off fat. Reserve one egg yolk. In large bowl, combine remaining eggs, sausage, spinach, mozzarella cheese, ricotta cheese, salt, pepper, garlic powder. Spoon sausage mixture into pastry. Put top crust on. In small bowl, combine reserved egg yolk with 1 tsp water. Brush on top of pie. Re-roll scraps of crust and make decorative design. Bake at 375ºF for 1 hour and 15 minutes. Let pie stand for 10 minutes. Makes 10 servings.
