6 firm fresh, ripe bananas
1/4 cup lemon juice, orange juice or white colored carbonated beverage

Dry in oven: Peel and slice bananas into juice or carbonated soda. Fork onto baking sheet, sprayed with non-stick spray or oil. Bake at 175ºF for 2-3 hours until golden. Banana chips will be crisp. Cool chips completely before storing. Pack in glass jars or reclosable plastic bags.

Dry in microwave: Prepare bananas as above. Arrange slices on oiled or sprayed microwave roasting rack or plate. Microwave on defrost mode for 10-15 minutes or until slightly sticky to the touch. Remove and transfer to wire cooling rack. Allow to stand overnight before packing in air-tight container.

Dry in food dehydrator: Prepare as above. Dry 4-8 hours until desired dryness is reached. Package in clear reclosable containers and store in dark place.

Fried banana chips: Prepare bananas as above. Heat coconut oil to 375ºF and fry chips in one layer for 1-2 minutes until crispy. Remove with slotted spoon and place on paper toweling to remove excess oil. Sprinkle with salt, seasoned salt, turmeric, or cinnamon and sugar, if desired, immediately after removing from fryer. Package when cooked in airtight container.
