2 T. olive oil
1 c. chopped onion
2 t. minced garlic
1/4 lb. diced ham
1 1/2 c. peeled, chopped tomatoes (or use canned)
1 c. garbanzo beans
1 c. Great Northern or navy beans
5 c. chicken stock or combination stock and water
1 t. ground cumin
1/2 lb. chorizo or hot Italian sausage
2 c. unpeeled, diced potatoes
1/2 lb. fresh spinach, chopped or 10 oz. frozen, chopped spinach
salt and pepper

Directions:
Directions:
Heat olive oil in large soup pot; add onions and cook until
tender. Add garlic; cook 1-2 minutes. Add tomatoes, both cans of beans (and their juices), stock, and cumin. Bring to a simmer.
Meanwhile, heat frying pan and brown chorizo or Italian sausage, crumbling meat as it fries. Drain off fat and add browned meat to soup along with the potatoes. Simmer until potatoes are tender, about 15 min. Stir in chopped spinach and season to taste with salt and pepper. Simmer 5-10 minutes.
