2 C graham cracker crumbs
1/4 C sugar
1/2 C melted butter

Filling;
32 Oz cream cheese
1 C sugar
3 TBS flour
5 large eggs
1/3 C heavy whipping cream
1 TBS lemon zest
1 tsp vanilla extract

Topping:
1 C sour cream
2 TBS sugar
Vanilla

Preheat oven to 350

Make Crust & press over bottom and 1" up sides of 9" springform pan.

Beat Cheeses/sugar/flour until smooth (about 2 min) Add the eggs one at a time, beating after each. Add the whipping cream & flavorings and beat until incorporated.

Bake at 350 for 15 min. lower oven temp to 250 and continue to bake for about another 60-90 minutes or until firm and only the center of the cheesecake looks a little wet and wobbly. Remove and place on wire rack to cool.

Make topping and spread over the warm cheesecake and return to the oven for about another 15 minutes. Remove and carefully run a knife around edges to loosen from pan.

TO FREEZE: Let cool completely and place on a baking pan and freeze uncovered until firm. Then wrap in aluminum foil and place in a freezer bag. Seal and return to freezer. Can be frozen for several months. Thaw uncovered in the refrigerator overnight.

Bake for 15 minutes
