1 onion, sliced
Lamb meat, cut in 1" pieces
1 pkg. Tabouli mix
Tomato juice
Water
Olive oil, or half olive and half vegetable oil

This is how I wrote a recipe down from Grandpa for his Smeed Bonadura when he gave it to me one time. I always enjoyed his Smeed dish!
1) Let wheat/tabouli mix soak for 1-2 hours before preparing the Smeed.
2) Wilt onion in oil.
3) Brown meat in the same oil
4) Heat tomato juice and water in a pan (1-2 cups). When it boils, add the wheat mixture. Add meat afterwards.
5) As the wheat mix cooks, watch it. It will thicken.
6) It's ready when the wheat thickens and the mixture takes on the texture of well-cooked rice.
7) Option: put the wheat mixture in a 13 x 9 baking dish and cook in the oven for final heating.

This is all I have of Grandpa's instructions on how to make his Smeed Bonadura dish. I always looked forward to it when he made it and loved the texture of the wheat in contrast with the chewier lamb. Grandpa always added Lebnani yogurt to the top of it before serving. The cool creamy texture of the yogurt was a good topper for the dish. It's the sour cream of Middle Eastern cooking, but healthier!
