4-6 Red Potatoes, cut into bite-sized pieces or spilit in half
1 Lemon
Olive Oil
Cavendar's seasoning
Tomato juice
Oregano
Margarine or butter (optional)
Salt and pepper

Directions:
Directions:
Peel and cut up red potatoes into bite-sized pieces, or into long halves.
Lay potatoes in a shallow oven safe baking dish. (Lay flat if cut in halves).
Squeeze lemon juice over the potatoes.
Dot butter or margarine on the potatoes, or drizzle olive oil over the top them. Sprinkle tomato juice over the tomatoes. Season with oregano, Cavendar's seasoning, salt and pepper.
Add a little water to the pan to keep the potatoes from drying out. Cover with foil and bake at 350º to start. Turn down the heat a bit halfway through, and remove the foil. Baste liquid on top of potatoes periodically to keep moist. Cook for an hour, or so until potatoes feel done when tested with a fork.

This is Goldia Shoffey's adaptation of Greek potatoes. The family gobbles them up! Some recipes call for squeezing fresh lemon juice on the potatoes a few hours before cooking to make them extra lemony.
