Ingredients: 1 lb fresh tilapia, tuna, catfish, or shrimp 3 limes 1/2 cup mayonnaise 1 tsp chili powder 1/3 cup flour 1 cup shredded cabbage or lettuce 1/2 cup carrots, peeled and shredded 1 jalapeno or other pepper, thinly sliced 8 small flour tortillas

Directions:1) Rinse fish, pat dry, and cut into 1" pieces 2) For lime sauce, add juice of 2 limes into a bowl. Stir mayo and chili powder into juice. Use 1/3 cup of the sauce and toss fish into it. 3) On a plate or shallow dish, combine flour and 1/2 tsp salt. 3) In a large skillet, heat 2 tbsp cooking oil at medium heat. Working with a handul of fish at a time, lightly toss in flour mixture and add to heated oil in skillet. Cook 2-4 minutes, or until fish looks done, turning to brown as needed. Drain on paper towels. 4) Wrap tortillas in paper towels and heat in microwave 30 seconds. Top tortillas with fish, cabbage or lettuce, carrots, and jalapeno. Drizzle with lime sauce. Serve with lime wedges. |

Notes: I LOVE fish taco night! It's healthy and easy. And there are many combos you can try. Sometimes we use regular taco seasoning, cook the fish as if it were beef, and use shredded cheese, lettuce, chopped tomato, and sour cream to top the taco. I've noticed I especially like lime with the shrimp tacos. Guacomole would be a good addition as well.
