1/4 cup olive oil
1/2 loaf French bread, cut into 1-inch cubes
1 teaspoon coarse salt
1 1/2 cups grape tomatoes, cut in 1/2
1 cucumber, unpeeled, seeded, and sliced 1/4-inch thick half moons
1 red bell pepper, seeded and cut into 1-inch cubes
1 yellow bell pepper, seeded and cut into 1-inch cubes
1/2 red onion, cut in 1/2 and thinly sliced
large handful of basil leaves, coarsely chopped
3 tablespoons capers, drained
4 ounces feta, crumbled

Dressing
1 teaspoon finely minced garlic
1/2 teaspoon Dijon mustard
1/4 cup or more white wine vinegar
1/2 cup olive oil
generous sprinkle coarse salt
freshly ground black pepper

Directions:

Heat oil, add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes or until browned.

Whisk together all vinaigrette ingredients.

In a large bowl, mix together all salad ingredients before adding bread and tossing with the vinaigrette.

Season with salt and pepper.

I ate this Ina Garten inspired dish at a friends house several years ago and it has been a staple for me ever since. I like making it because it provides a starch and a vegetable in the same dish and tastes decent up to 24 hours later. When eaten with a rotisserie chicken or other protein source, it make for a nice meal.
