Roast of Any kind and up to 3-4 lbs

1. Preheat your oven to 400 degrees C

2. Place the roast into a roasting pan; and cook for 20 minutes without the lid on in 400 degree oven.

3. Add 1 cup of boiling water and put the lid on.

4. Turn the oven off and do not open for the next 3-1//2 hours

5. 40 minutes prior to when you want to eat; turn the oven back on to 350 degrees.

6. The 1st 10 minutes accounts for the time the oven is coming up to temperature. Cook the roast for 30 minutes.

This method should cook your roast to med-rare to medium.

Serve with your choice of sides
