1/2 lb Green beans-blanched
8 ripe plum tomatoes-chopped
6 scallions-cut into thin slices
1 tsp. finely minced garlic
5 tbsp. chopped parsley
1/4 cup olive oil
2 can of Tuna packed in water
salt and pepper to taste
3/4 lb of tube shaped pasta -cooked and drained.

1. Blanch the green beans x 2 minutes and drain.

2. Rinse with cold water.

3. Combine the cooked beans with the tomatoes, scallions, garlic, salt and pepper and 4 tbsp of parsley.

4. Drizzle in the olive oil, folding gently to mix. Let stand at room temperature for 1 hour. In the meantime cook the pasta, and prepare the tuna by draining it.

5. Add cooked drained pasta and tuna to the sauce. Refridgerate till serving time.

6. Top with remaining parsley. Note for a creamy dressing add a small amount of mayonnaise.
