1 lb lean ground beef
1 tbsp. vegetable oil
1 onion chopped
2 cloves garlic-minced
2 carrots-julienned
half sweet red pepper- thinly sliced
1 tsp each of ground ginger, cumin, cinnamon
1 tbsp. sweet or smoked sweet paprika
1/4 tsp. each of salt and hot pepper flakes
1 can (796ml/28 ounces) diced tomatoes
2 tbsp. tomato paste
3/4 cup sliced pitted green olives
2 tbsp. chopped fresh coriander or green onion
2 cups hot cooked rice ( or couscous)

1. In a large skillet, saute beef over medium-high heat; breaking up, until no longer pink (about 5 minutes). Using a slotted spoon, transfer to a plate. Drain the fat from the skillet.

2. To the same pan add 1 tbsp. of vegetable oil; fry the onion and garlic over med. heat until fragrant, about 1 minute.

3. Add carrots, red pepper, 2 tbsp. of water, paprika, ginger, cumin, cinnamon, salt and hot pepper flakes. Stir often until the vegetables are tender crisp-about 3 minutes.

4. Return the beef and any accumulated juices to the skillet. Add the tomatoes and tomato paste. Bring to a boil Reduce the heat and simmer until vegetables are tender ( about 10 min).

5. Stir in olives and coriander; heat through about 1 minute.

Serve over rice ( or couscous).
