1 1/2 # med. shrimp, shelled and deveined,
2/3 c fresh orange juice,
1/4 c fresh lemon juice,
1/4 c fresh lime juice,
1/4 c unsweetened pineapple juice,
1 mange, peeled and diced,
1 c diced jicama,
1/2 sm red onion, minced,
1/2 c chopped fresh cilantro,
1 jalapeņo chile, seeded and minced,
1 avocado, peeled and diced,
1 T olive oil,
slat and pepper,
tortilla chips

Heat large covered saucepan of water to boiling on high. Fill large bowl with ice and water. Add shrimp to boiling water, cook 1-2 minutes or until just opaque throughout. Drain; transfer to bowl of ice water. Let stand until cold. Drain really well. Cut shrimp into 1/2 inch pieces. Transfer to large bowl; stir in fruit juices. Cover and refrigerate 30 minutes. Stir in mango, jicama, onion, cilantro, jalapeņo, avocado, oil and 1/2 tsp each salt and freshly ground pepper. Cover and refrigerate 30 minutes or longer. Serve with chips.

Use less jalapeņo if desired as it adds quite a bite. Plunging shrimp into an ice bath keeps them very tender.
