2 onions, chopped
4 garlic cloves
1 tbsp. peeled, chopped fresh ginger
1 tsp. garam masala
1 tsp. yellow mustard seeds
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp-1/2 tsp. cayenne pepper
1-lb skinless, boneless chicken thighs cut into 2" pieces.
1 (15oz) can chickpeas, rinsed and drained
1/2 tsp. salt
1 (14 oz) can diced tomatoes
1/2 tsp. coarsely ground black pepper
2 tbsp. chopped fresh cilantro

1. Puree the onion, garlic, ginger, garam masala, mustard seeds, cumin, coriander and cayenne pepper in food processor.

2. Transfer puree to a large skillet and cook over high heat, stirring frequently until the liquid evaporates (about 5 min.)

3. Stir in the chicken, chickpeas, tomatoes, salt and pepper.

4. Bring to just a boil. Reduce heat.

5. Cover and cook until the chicken is cooked thoroughly, about 30 min
