1-3/4 cup flour
1-3/4 cup white sugar
2- 1/2 tsp. baking powder
1 tsp. salt
1/3 cup softened butter or margarine
2/3 cup milk + another 1/3 cup milk
1 egg
1 tsp. vanilla extract

Directions:
Directions:
1. Combine the 1st four ingredients and mix well for two minutes at medium speed.

2. Add the butter and milk and mix another 2 minuets scrapping the bowl well.

3. Add 1 egg, 1/3 cup milk and 1 tsp. vanilla extract. Blend well.

4. Pour either directly into a pan or put fruit such as home canned peaches/cherries in the bottom of the pan first and then pour the cake mixture on top of the fruit.

5. Bake 350 degree oven until golden brown. Approx. 30 minutes.
