1/4 cup diced carrots
1/2 cup diced onions
1/2 cup diced celery
3 cups hot water or stock
1 cup of canned tomatoes
1/2 cup diced potatoes
1/2 cup diced turnips
1 tbsp. parsley
1/2 tsp. salt
1/8 tsp. of pepper
1/2 cup cabbage, spinach or lettuce

Directions:
Directions:
1. In a little butter and oil saute briefly the carrots, onions and celery in a large stock pot.

2. To this pot add all the other ingredients except the cabbage, spinach or lettuce.

3. Cover and cook for 35 minuets then add:
1/2 cup chopped cabbage, spinach or lettuce.

4. Cook another 5 minutes more and serve

Note: feel free to use what ever you have left over in your fridge. Corn works really well too.
