3 medium zucchini (cut into long strips so you have 4 wedge sticks)

1 tbsp + 1 tsp Olive oil
1/2 tsp lemon rind
1 clove garlic chopped fine
1 tbsp. dry bread crumbs
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
1. Saute the Zucchini in the oil (3-5 minutes) or until tender and crisp.

2. Saute Lemon & Garlic 30 seconds in crumbs then add in the Zucchini strips
